Matilde’s Traditional Tiramisu Recipe (Serves 8)

Ingredients:

400g Vicenzovo Lady Fingers

400g Mascarpone cheese

4 eggs

100g sugar

2 cups strong, chilled coffee

30g cocoa powder

3 tablespoons of sweet Marsala (optional)

Instructions:

Separate egg yolks from whites. Beat egg yolks with sugar until creamy. Beat in mascarpone.

In a separate bowl, beat egg whites until they form soft peaks and gently fold into the mascarpone mixture.

Combine coffee and Marsala. Quickly dip the Vicenzovo Lady Fingers into the coffee mixture.

Arrange a layer of dipped biscuits in a flat dish. Spread a generous layer of the mascarpone cream over the biscuits.

Repeat the layers until you’ve used all the ingredients, finishing with the cream.

Refrigerate for at least 4 hours. Just before serving, sprinkle with cocoa powder.
