Potassium sorbate is a granulate and is especially active against fungi, yeasts and not less against bacteria. Sorbic acid is the active ingredient, but Potassium Sorbate dissolves much better in water than sorbic acid. Potassium sorbate is used in drinks, dried fruit, cheese, milk and egg products, bread and confectionery and sauces.
