Mark each dowel exactly level with the top of the frosting, then trim all dowels for that tier to that same height. Uneven dowels are the most common cause of a tilted cake — even 1-2mm of difference between dowels is visible once the next tier is stacked on top.
4. Stack and Center
Place the next tier’s board directly on top of the trimmed dowels, checking it’s centered before letting go. For extra security through transport, a single long dowel driven down through the full stack (a “center dowel”) adds resistance against shifting.

- Assemble in the coolest part of your kitchen and keep the cake refrigerated until the last possible moment before transport.
